Pickled Red Onions

Pickled Red Onions are the perfect addition to any meal with their vibrant color and tangy crunch!

Ingredients
  

  • 1 or 2 Red Onions
  • 2 C Apple Cider Vinegar
  • 1 C Filtered water

Equipment

  • 1 Qt Glass Mason Jar or another airtight glass jar
  • 1 Kitchen Knife or mandoline

Method
 

  1. Peel onions and cut into thin slices.
  2. Add onion slices to a glass jar.
  3. Cover the onions with 3 parts ACV and 1 part water. Make sure onions are fully submerged in the liquid.
  4. Place 1 tbsp caraway seeds in (if desired) and mix in.
  5. Cover and seal the jar and leave in fridge for the pickling process for 24 hrs before use. 
  6. Store in airtight jar for up to 2 weeks in fridge.

Notes

Recipe Variations:
  • Add peppercorns - Most traditional pickled red onion recipes add a tablespoon of peppercorns.
  • Add red pepper flakes to make spicy pickled red onions.
  • Add 1 tbsp of sugar to cut the tanginess a bit.
  • Add any seasoning you desire - garlic, mustard seeds, thinly sliced jalapenos, etc.
