Method
- Peel onions and cut into thin slices.
- Add onion slices to a glass jar.
- Cover the onions with 3 parts ACV and 1 part water. Make sure onions are fully submerged in the liquid.
- Place 1 tbsp caraway seeds in (if desired) and mix in.
- Cover and seal the jar and leave in fridge for the pickling process for 24 hrs before use.
- Store in airtight jar for up to 2 weeks in fridge.
Notes
Recipe Variations:
- Add peppercorns - Most traditional pickled red onion recipes add a tablespoon of peppercorns.
- Add red pepper flakes to make spicy pickled red onions.
- Add 1 tbsp of sugar to cut the tanginess a bit.
- Add any seasoning you desire - garlic, mustard seeds, thinly sliced jalapenos, etc.
